Popcorn Chop Suey

Peanuts, coconut, and popcorn - snack heaven!


Makes: 25 to 30 balls


Ingredients:
5 c. popped ACT II® Microwave popcorn, butter flavor (approx. 1 bag)
1/2 c. molasses
1/2 c. corn syrup
1/2 tbsp. butter
1/2 c. grated coconut
1/2 c. cocktail peanuts


Directions:

  1. Mix popcorn, peanuts, and coconut in large bowl. Set aside.
  2. Mix molasses and syrup with vinegar and boil slowly to prevent burning until a bit dropped in cold water becomes brittle.
  3. Remove from heat, add butter, and slowly pour over popcorn mixture. Shape into balls as mixture cools.

In an average bag of popcorn, the number of yellow kernels will outnumber the white ones by nine to one.
