Classic Popcorn Balls

Popcorn is crisp and chewy when coated with confectioners’ sugar, marshmallows, corn syrup, and Fleischmann’s mixture

Makes: 12 servings (1 ball each)

Ingredients:

1 bag (2.9 ounces) ACT II®  94% Fat Free Butter Microwave Popcorn (11 cups popped)
PAM® Original No-Stick Cooking Spray
1-¼ cups confectioners’ sugar
½ cup miniature marshmallows
1/3 cup light corn syrup
2 tablespoons Fleischmann’s® Original-stick
1 teaspoon cold water
¼ teaspoon salt (optional)

Directions:

Prepare popcorn according to package directions.  Remove all unpopped kernels.  Place popped corn in large bowl sprayed with cooking spray.

Spray sides only of medium-sized heavy saucepan with cooking spray.  Combine confectioners’ sugar, marshmallows, corn syrup, Fleischmann’s, cold water and salt, if desired, in saucepan over medium-high heat.  Stir constantly with wooden spoon until mixture comes to a boil. Remove from heat; pour over popcorn, stirring gently until evenly coated.

Spray hands with cooking spray and quickly shape popcorn mixture into 1-1/2-inch balls. Allow to cool before eating.  Store in airtight container.

Laid flat, the amount of Act II Microwave Popcorn bags sold last year would reach as tall as almost 48,000 Sears Towers.
